Mozzarella is a type of cheese originating in Italian cuisine.
The designation of origin with European protection is Mozzarella di Bufala Campania, a PDO cheese that is produced with buffalo milk in the provinces of Caserta and Salerno and in some municipalities of other provinces of the Lazio, Campania and Apulia regions.
A large production of mozzarella-type cheeses based on cow’s milk is also found in other regions of the country, as well as with sheep’s milk on the island of Sardinia and in Aruzzo and Lazio.
Of very ancient origin, the first evidence of its existence dates back to 1570. The name “mozzarella” derives from the Italian mozzare which means manually ‘cutting’ the stretched curd.
Mozzarella is famous for being the cheese used in the preparation of Pizzas and also for salads such as the famous “Caprese” with tomato and some basil leaves, or together with Italian ham from Parma or San Daniele!
